Welcome to INUA

After 3 years in the making – INUA opened its doors to the public in June 2018. The restaurant which is situated 9 floors up, in the neighborhood of Iidabashi, overlooks Tokyo’s impressive skyline whilst dishing up Japanese seasonal ingredients with a Scandinavian approach.

INUA – originating from Inuit methodology and referring to the life force and spirit that runs through nature – is led by German-born chef Thomas Frebel.

‘INUA’ is much more than just a name. For us, it carries a deeper sentiment and serves as a constant daily reminder of our Nordic roots: the seed upon which this journey began’.

Thomas, who spent the last 10 years as the head of Research & Development at renowned Danish restaurant Noma, is being joined by a strong team of 30+, who he playfully describes as a ‘complete bunch of Nomads’.

The team shares a rich and diverse culture, all throwing their different backgrounds and experiences into the mix. Made up of over 15 different nationalities, they have come together from all across the globe, and stumbled upon this great big city, with one collective goal- to settle in Tokyo, connect and seek inspiration from their surroundings.
